When you say "old man gaming" I'm assuming you're talking about the stuff I like too, like old school PC games where a 1060 is still like 10X what you would actually need to run them. If that's the case, and also considering the other stuff you mentioned doing, the 1060 you have would be just fine for the new ultrawide monitor. It wouldn't struggle at all unless you played newer games on it.
Heck no he doesn't, he's just dying to make goofy Threadripper monster build lists like the rest of us.
Just the integrated gpu in the processor. No need for one since it's for my grandpa.
Lesser powered PSU's of the same quality were more expensive. Also I don't think my grandpa will be doing any hardcore gaming anytime soon.

Haha he missed those days of computing, he didn't get into the game until around the Windows 7 days.
He is currently 83 years old.
He actually doesn't take that many pictures but I will definitely keep that in mind if he ever runs into storage issues.
