Suggestions:

CPU: i5 6500 ($194.89) --> i5 8400 ($178.90) While the 8400 runs at a slower base clock speed, it can boost higher than the 6500 and features two more cores than the 6500. (Boost means that the clock speed increases when the CPU is under load and slows down during idle. Seeing as you can't overclock the non-K chips, it's the better option.) Motherboard: Strix B250F ($190.00) --> Strix B360F ($142.45) It's the same board but newer and cheaper, featuring better onboard RGB control and other general QOL features.

Note: You will need to have both in order to be compatible. Either stick with what you have now or switch to these.

You can fit a 280mm radiator in the front, it's just you'd have to put those RGB fans in the front of the case, where they are only visible through the mesh. Not like it really matters though, the performance between a 240 and 280 isn't all that great.

Two cards for gaming and two cards for mining?

(I mean, that's what I would use the cards for, seeing how you have plenty of cooling and can't do 4-way SLI)
