I have a corsair CX750 from a few years ago when I troubleshot a PC. Would it be good enough for an RTX 2060?

If you already have it, then sure. It has synchronous rectification and DC-DC converters, so it's fine for modern standards.

Top-end cards from last years can emit high transient power spikes which shut down PSUs which can't cope with that (and nobody tested CX750's transient response), but I don't believe RTX2060 is one of those cards.
