Will a 550w PSU work with a R5 1600 (possibly overclocked) and a evga SC 1060 6gb work with space for upgrades in the future?
Depends what psu it is. Wattage doesn't tell you anything about how good or bad a psu is.
Even a good 450 watts psu would be more than fine for your setup. As Enrico posted, just get a good 550 watts psu. As for upgrades, it would depend on which components...

Thanks for the advice, but I am in the UK so can you find any PSUs, preferably modular or semi modular, that would be helpful as I will be buying it soon

Yes its fine but the bitfenix whisper would be a better choice and 450 watts is a fine for your build.
Wattage means very little, but yeah it's plenty of wattage. A 500w crap unit will not put out near that amount, and even if it did might put out unstable voltages which can be dangerous for all the other components in the build. What I am trying to say is don't cheap out on a PSU and only buy ones that have been tested by a professional reviewer.
